What the hell is cooking?

My friend and I try to do tomorrow strawberries three ways. It is made of whipped cream, strawberry terrine strawberry jelly, creme brulee, angel food cake and strawberries with tarragon sauce. Calls for modified starch and superpomme. I do not know what these things are. Help? I do not need to know the recipes you need to know what those ingredients.
